Kannika’s journey began with a deep-rooted passion for cooking and a desire to share traditional Thai flavors with the local community. Her dedication is evident in every dish, creating a dining experience that is as warm as it is flavorful.
Starting with the fresh shrimp roll, my meal was an absolute delight. The rice paper-wrapped roll was perfect on the outside, with succulent shrimp and a balance of herbs that made it light yet flavorful.
Next, I had the Mango Curry, a house favorite that perfectly balanced the creaminess of coconut milk with the sweetness of fresh mango.
This dish felt both indulgent and refreshing, bringing a unique flavor profile that isn’t always found in Thai cuisine but was beautifully executed here.
The Massaman Curry was equally exceptional, with tender meat and a rich, fragrant sauce layered with spices. Each bite was a burst of flavor, with hints of coconut and earthy spices coming through.

This charming Colorado city truly comes to life with the magic of Christmas, offering a memorable holiday experience for all.
Old Town Fort Collins Christmas Lights (November 1, 2024–February 14, 2025)
Old Town Fort Collins transforms into a dazzling winter wonderland each holiday season, with thousands of twinkling lights illuminating its streets. This year, the Downtown Holiday Lighting Ceremony will kick off on Friday, November 1, 2024, from 5:30-7 pm in Old Town Square. The event includes live music and a countdown, with the lights expected to turn on around 6:30 pm, marking the official start of the festive season.
The stunning light display in Old Town Fort Collins spans 22 block-faces, illuminating College Avenue, Laporte Avenue, Magnolia Street, Walnut Street, Linden Street, and Pine Street with lights wrapped around archways, alleys, and treetops. South of Downtown, near the First Presbyterian Church, visitors can enjoy a giant blue LED holiday tree with 25,000 pixel lights. The Downtown Holiday Lights will shine nightly through Valentine's Day. Parking may be limited, so visitors are encouraged to use public transportation, carpools, or rideshares.
Gardens on Spring Creek Holiday Lights (Select Nights December 5–29, 2024)
The Community Botanic Garden of Fort Collins, also known as The Gardens on Spring Creek, is a must-see during the holidays, thanks to its annual Garden of Lights Winter Holiday Festival. Visitors can enjoy a whimsical half-mile loop illuminated by hundreds of thousands of LED lights, transforming the garden into a winter wonderland. Highlights include vibrant grapevines, giant flowers, butterflies, and a John Deere tractor. The enchanted forest, a blue LED pond, and the Color Blossom Show at the Great Lawn, with 700 lighted blossoms, are sure to captivate guests.
This year, the event will take place on select nights in December: 5–8, 12–15, 19–23, and 26–29, from 5 to 9 pm (gates close at 8 pm). Tickets are $12 for adults and children 12 and older, $5 for children 5–11, and free for those four and under.
NoCo Winter Wonderland (2024 Dates TBA)
Fort Collins' Winter Wonderland at Colorado Youth Outdoors offers a dazzling drive-thru holiday light experience. This festive event transforms 220 acres into a glowing spectacle with wildlife-themed light sculptures and a one-mile illuminated trail. Highlights include lighted trees, falling snow, and even Santa fly fish! Santa, Mrs. Claus, and mischievous elves add to the holiday magic, making it fun for all ages.
The drive-thru tour lasts about 15 minutes and is available from 5:15 to 8:30 pm, with tickets sold in 15-minute time slots. Prices start at $25 per car, so be sure to grab your tickets early—this popular event sells out fast. Not only does Winter Wonderland provide a memorable holiday outing, but it also supports the Colorado Youth Outdoors organization.
Loveland Winter Wonderlights (November 23, 2024–January 1, 2025)
Loveland’s Winter Wonderlights at the Chapungu Sculpture Park offers a dazzling, free holiday experience. Over 200,000 lights, including illuminated African stone sculptures, create a magical atmosphere. A 23-foot (7 m) tall LED Christmas tree is the centerpiece, synchronized with festive music in a 30-minute light show that runs continuously from 5 to 9 pm nightly. On select Winter Wonderlights Live nights (November 23, December 13, and December 14), visitors can enjoy live entertainment, vendors, and holiday-themed activities from 4:30 to 8 pm.
With paved walkways and open spaces, the park provides a pleasant stroll for visitors, who are encouraged to bundle up for Colorado’s unpredictable weather. Parking is available at the nearby Promenade Shops at Centerra, with additional accessible parking during non-Live nights. Visitors can also enjoy shopping and grab a warm drink before heading over to the light show. While well-behaved dogs are welcome, they must be kept away from the live reindeer during Live Nights.
Residential areas
Many residential areas in Fort Collins go all out with Christmas decorations, transforming neighborhoods into dazzling holiday spectacles. Streets like Albion Way, Birmingham Drive, and Crabtree Drive come alive with vibrant light displays and intricate decorations, attracting visitors from across the city. A standout among these homes is the Bishop House, located at 2412 Crabtree Drive, affectionately known as “Bishop Blinkenhaus” during the festive season.
Brad Bishop’s home showcases over 120,000 lights, including synchronized light shows set to music on 90.7 FM. Visitors are treated to festive arches, candy canes, a Mini Christmas Village, and 12-foot-tall (3.7 m) pixel trees that dance in time with the music. One fan favorite is the automated Christmas carousel. This holiday wonderland runs from 5 to 9:30 pm nightly from December 1 through January 1, and Bishop is always making last-minute tweaks to perfect his setup.

One of the co-authors is Mike Viney, a teacher-in-residence at CSU’s College of Natural Sciences Education and Outreach Center.
“Postcards are an avenue to illuminate and preserve the historical heritage of Fort Collins at both an individual and community level,” said Viney, co-author with Wayne Sundberg and Meg Dunn. “Before the age of digital records, inexpensive postcards were the worldwide social medium to update family and friends on our life and travels. With iconic images and short messages, penny postcards were popular, tangible collectibles.”
About the authors
Viney was a science teacher in the Poudre School District for 30 years before joining the Education and Outreach Center. Sundberg taught history and geography at Lincoln Junior High School for 27 years, and he has written several books and articles on Fort Collins and Northern Colorado history. Dunn, a former math teacher, is president of the Fort Collins Historical Society, vice president of Historic Larimer County, and an author with Northern Colorado History.
“A History of Fort Collins Through Postcard Views” focuses on the city from the late 19th to early 20th century. With 300-plus pages of well-referenced material, the book is well suited for anyone interested in Fort Collins history and the evolution of postcard design.
Tickets for the presentation are $5 per person, and reservations are requested at globalvillagemuseum.org. Copies of the book will be available for purchase and signing by the authors.

It’s completely possible to fish in town on your lunch break or between classes if you’re a student at CSU. With so many options available, which ones do you choose? The following is a list of recommendations for fishing in and around Fort Collins.
Here are among the best places to fish near Fort Collins, CO, in no particular order:
Sheldon Lake
This spot isn’t quiet, secluded, or remarkably scenic. It is, however, a solid place to fish in the heart of Fort Collins. According to the Rocky Mountain Collegian, bass, trout, and catfish can be found in the modestly sized urban lake set in Fort Collins City Park. Sheldon Lake also under a minute’s walk away from a strip mall with a pet supply store and computer repair shop in case you want to run a couple of errands between casts.
Horsetooth Reservoir
Between its impressive size and scenic backdrop, Horsetooth Reservoir is a gift for Fort Collins residents whether they’re fond of fishing or just like hiking. Shore and boat fishing are options here, and the reservoir offers trout, smallmouth bass, and walleye. During the weekends, everyone wants a piece of this rewarding body of water, so make sure to show up early to claim your spot.
Boyd Lake State Park
In addition to fishing, Boyd Lake offers all sorts of outdoor recreational opportunities, including camping, boating, swimming, and hunting. This lake and surrounding state park press up against residential neighborhoods, making the area easy to access from Fort Collins, but also not a particularly striking spot by Colorado standards. Even so, with walleye, white bass, catfish, and trout to wrangle, it’s a solid spot in Loveland to bring the family and relax.
Watson Lake
This is a nice option if you’re looking to stay close to town but also get a more secluded, scenic experience that lakes closer to Fort Collins can’t give you. Flanking the Cache la Poudre River, Watson Lake is about 20 minutes northwest of town. While this is reportedly an excellent spot for fishing, it’s even better for watching birds like Golden Eagles, White-throated Swifts, and Canyon Wrens.
Douglas Reservoir
This 565-acre reservoir is stocked to the gills with a variety of cold and warm water species, including Sauger, Rainbow Trout, Wiper, and Smallmouth Bass. When conditions allow, ice fishing is permitted. With a flat and mostly treeless terrain, Douglas Reservoir isn’t the state’s prettiest body of water, but it is an excellent fishing spot that’s a quick 20-minute drive north of town.
Poudre Ponds
At Poudre Ponds, bass and rainbow trout are rumored to be plentiful and easy to catch. Located in Greeley 40 minutes southeast of Fort Collins, it’s a great spot to bring kids and inexperienced anglers. This is an easily accessible area with a trail that offers multiple ponds to fish as well as the Cache la Poudre River.
Riverbend Ponds Natural Area
As one of Fort Collins’ favorite places to fish, hike, and birdwatch, the Riverbend Ponds Natural Area is a phenomenal place to get out and enjoy nature without leaving town. The area’s numerous offerings of small ponds are consistently stocked with warm water fish like largemouth bass, crappie, and channel catfish. With accessible waters and flat, easily manageable hiking trails, this is a prime spot for families and stress-free fishing.
Cache la Poudre River
If you consider yourself a serious fisherperson, make sure to visit this spot if you can only manage to spend time at only one on this list. For starters, the Cache la Poudre River is the only river in the state to have earned a Wild and Scenic River designation from the US National Park Service. Two of its sections have also been officially called Wild Trout Waters by the Colorado Division of Wildlife.
To boot, it’s also stunningly beautiful and offers enough space to fish by yourself even during times when anglers are likely to frequent the river the most. There are plenty of places in Fort Collins where you can fish this majestic river, but it gets far prettier and more promising once you leave town and enter the mountains. The Poudre Canyon is about an hour’s drive from town and offers stellar fishing opportunities in one of the state’s prettiest destinations.
Carter Lake Reservoir
From Rainbows to Black Crappie, Carter Lake Reservoir is regularly stocked with rewarding, catchable fish. Located southwest of town, this sizable body of water is home to a marina, and is a great option if you’re looking to rent a boat to boost your chances of catching the reservoir’s biggest fish.
There are also numerous campsites and an RV park to choose from, which is ideal for weekend trips that involve early mornings. And at a manageable 45-minute drive, it’s easy and quick to get to from Fort Collins.
Seaman Reservoir
Known for its impressively sized perch, Seaman Reservoir is a secluded body of water 30 minutes northwest of town. In 2007, the state record for yellow perch was caught here, but there are plenty of other species to be found in these waters as well. In addition to fishing, visitors also flock to Seaman Reservoir to swim, boat, and cliff-jump. Ice fishing is permitted during the winter months, and a fee is required to access the reservoir year-round.
Red Feather Lakes
At just under an hour’s drive from Fort Collins, the Red Feather Lakes area is a gorgeous fishing spot that can be accessed for conventional and ice fishing. However, out of the 30 lakes in the area, only six offer public fishing. These include the Creedmore, Dowdy, Parvin, West, Bellaire, and Lost Lakes.
If you’re fond of trout, this area has you covered with Brook, Brown, Rainbow, Cut Bow, Native Cutthroat, and Splake. The rare Tiger Muskellunge can also be caught here on occasion. Between this area’s beautiful setting, impressive offering of fish, and numerous places to camp, it’s a great day trip or weekend getaway option.
